We have always done ours. Occassionally we will take it in when we want something special made that we cant do

Since I got my Kitchenaid for Christmas, I now make my own goodies!!!

Cabela's has some great sausage kits!

I normally do it myself much to my wife's chagrin. She complains that I never get enough of the sinew, etc. out. Last year My two brothers-in-law and I had to skin, cut up (including a lot of burgerizing), shrinkwrap, then butcher paper wrap 11 WT deer, two merriams, and 3 sharptail grouse! We started at 5:30 PM and finished at 4:30 AM the next morning. It sucked! I still had a doe tag. I was told, "If you shoot anything it'll still be hanging when you come back next year!"

The pic was just before we started hanging and skinning. My other brother-in-law brought in his two bucks while we were hanging deer, then we all 3 went to work. Ouch!
