I was just whipping up a batch of this to take to a July 4th get together. It's a recipe handed down thru my mom's side of the family...it is AWESOME!!!
Granny Greats Persimmon Pudding 1 C brown sugar 3/4 C cold water Butter about the size of a walnut Put the above in an oblong cake pan or simlar dish, put in the oven at 350 and let it melt. Meanwhile.... Cream together: 1/2 C brown sugar 1/2 C white sugar 1 C persimmon pulp 1/2 C shortening 1 1/2 C milk 1 egg 1 t soda 2 t baking powder 1 1/2 C flour 1/2 t cinnamon 1/4 t nutmeg Pour this mixture over the top of the melted brown sugar in your pan. Return to the oven and bake 45 minutes or so until the sides start to pull away from the pan and the top is "crinkly"

Persimmon Pudding is so good I don't use the brown sugar but will try it. I have a number of trees and fight with the deer to get my share.

Yeah!!! If the persimmons grow without any help from you, it ain't considered baiting!!!!! I've been contemplating hanging a stand in a grove I know back up on a mountain ridge.
