Here in Texas a monster runs 200 lbs on the hoof. The average buck probably goes 150 lbs but the racks are pretty decent. Good management would produce an average of probably 130-160 or even better.

In Montana I find the average whitetail will average 200 lbs or more on the hoof but the racks are more "squatty" shorter tines, maybe a bit less spread but much bigger bodies than down here.

Great White:

I've seen does field dress at 160 - last year I got one that dressed at 144. We had a small racked 2 1/2 year old buck that year that dressed at 200.

Bucks in the 240 - 250 range are relatively uncommon in the wilderness area I hunt, but there are a few. I live near Ottawa, and my butcher cut one up 3 years ago that dressed ar 292.

Since we went to the antler restrictions and thinning out the overabundance of doe. We are seeing bigger bodied deer here in PA. I killed one that was 255 on the hoof. Last year my buddy killed a 2.5 year old that went 230.
