put this in the waterfowl section,i'll try it here--is it safe to eat the liver,heart and gizzards from canada geese? going to make some liver sausage,and pickle the hearts and gizzards.any input?----encore

well i pickled the hearts yesterday,i'll find out in about a week how they taste making the goose liver sausage as we speak,find out tomorrow how that tastes, gizzards tomorrow, and smoked goose breasts and chunks the next day..----ps if you don't hear from me for a while i'm either getting my stomach pumped or dead! lol----encore

I hope all goes well...stomach pumped...lol I've never heard of anyone dying from eating goose pieces-parts. I suppose as long as you don't get a bird that's eaten any lead, you should be ok.

tasted the goose liver sausage last night,turned out great,better than store bought.hope it freezes well ,i made 10 lbs. i've got the goose chunks in the smoker and the gizzards simmering on the stove.---encore
