The key to Divinity is a really good candy thermometer. You have to make sure it doesn't get above hard ball stage AND you get it off the heat immediately once it gets there. Actually, the key to any candy that says hard ball stage is a really good thermometer! I have tried it before using the old "put some in water to see if it forms a ball" method but it did not turn out for squat!! We DID use that batch for baseballs!!
