Squirrel usage
 
I'm looking for any good recipes that I can use for squirrel. I once had a squirrel stew that was mighty tasty but I personally haven't done any dishes myself. Appreciate any offers that some of you may have.

Your best bet is to stick with the stew. Squirrel au natural is not too tasty, nor is it tender. As a matter of fact, it's on the very gamey side. Squirrel in stew is best. I just chunk mine in a crock pot with carrots, taters, onion and some celery. Add salt and pepper and you've got a tasty meal. :)

Ah, tree rats! hehe!

My grandmother used the old ones for squirrel dumplings. Make them just like you would chicken and dumplings—boil the squirrels and take the meat off the bone. A different flavor and better liked than the chicken ones at my dad's house!

The young ones were chicken fried (soaked in water until the blood is out of it, soaked in buttermilk for a few hours, breaded with milk/egg and flour, and slow fried in a cast iron skillet). I swaney that is the best there is!! And we would skin the head out and fry it whole—ain't nothing like the brains and tongue!! The only problem is they are so small and it took a while to get enough!

She also used to fry it up then use the drippings to make a milk gravy and put the squirrel back in the gravy. Honey I think I am gonna have to go home and pull some out of the freezer! Thanks for bringing back memories!

I know, the tongue and brains part sounds gross but is amazingly delicious. Sigh. Ever tried deer brains and scrambled eggs? When I say we were po', I mean we couldn't even afford the 'or' at the end.

I may or may not have told this before but here goes anyhow...

We, my fatherinlaw and 4 brotherinlaws, were at a deer camp, a number of years, ago when the old man decided he was gonna fix supper that night. While us "boys" were fixin to leave, he was breakin out his ole 20 ga. Squirrel was on the menu for the evening. Ya'll gotta understand, I ain't real fond of squirrel, but I will eat it occassionally. Off and on during the morning, we'd hear that 20 roar every once in a while. At Lunch, the ole man was happily yanking the hides off of those tree rats, all the while talking about how good those dumplings were gonna be. Now, I ain't a real fan of dumplings neither, but again, I will eat them.
A litlle after dark, us "boys" came wandering back in to the smell of squirrel boiling. My stomach was rolling around, but I clamped down and got a bowl so's I could get it over with. I used the ladle to put a dumpling or two in my bowl and pushed down thru them to get a piece of meat or two off the bottom. When that ladle cleared the dumplings, I'm staring at 2 empty eye holes in a squirrel skull! YUCK!!!!!!!!!!!!!!!!!!!!!!! I dumped the whole mess back into the pot, got out a jar of PeterPan and had PB&J samiches for dinner.
The ole man gotta kick outa smackin those heads with a spoon back and noisily sucking out the contents. 'Bout lost my PB&J once or twice. Finally had to get up and go outside for some fresh air.

I miss that ole man but not his nasty eating habits.

I'll bet y'all don't suck the heads when eating crawfish either. :( What's this world coming to? Now I don't know about boiled but fried squirrel heads are da bomb! Only we don't suck the brains out, we tear the head apart and get the meat that way.

Suckin' on crawdads, I can handle...it's the squirrel head that's made me nauseous. I can just imagine squirrel heads rolling around in the pot...an eye rolling up to meet yours every now and then.
