Any good jerky recipes?
I always have a friend make it for me. This year I might try it.:)

High Mountain Seasonings makes great stuff! You just slice your meat, let it soak, then put it up to dry.
I've had jerky where all that was used was Worchestershire and Soy Sauce. It was mighty fine. I believe Cabela's also offers jerky making kits. |

I just soak mine in some sort of commercial marinade like Alro Gametamer or something similar.Most all of them have soy sauce and spices in them.It'll save you the mess of making your own.

simple venison jerky
1 1/2 # venison 1/4 c. Worcestershire sauce 1/4 c. soy sauce 1 t. liquid smoke 1 t. onion powder 1/2 t. garlic powder 1/2 t. black pepper dash tabasco sauce (we add a heaping teaspoon of crushed garlic) marinate in ziplock bag 24 to 48 hrs in fridge its great, we actually have a batch on right now. |
After alot of expermienting we finally came up with this recipe
Grind 10 lbs of meat, deer elk antelope, moose, beef, whatever. This should be ground meat with no fat. Add 3 tablespoons of salt 2 tablespoons of pepper 2 tablespoons of some kind of commerical seasoning with with garlic (OK Joe, Grampa Lynns, etc) 2 tablespoons of worchestershire sauce 2 tablespoons of liquid smoke 1 or 2 tablespoons of tabasco----if desired BTW I use heaping tablespoons on the spices. Also this is hot so if you don't like pepper you should cut this back to 1 tablespoon. Mix all ingedients and use jerky shooter to make sticks or strips. Dry in dehydrator or oven. |
