Anyone have a good blackberry recipe?
The kids love to go out back and pick the berries. We do have to watch the boy though. He'll eat em all up before we get back to the house. Needless to say he's not allowed to carry the basket anymore!

I would have to say pie! I never paid enough attention when my mom canned. And I'm still trying to recover from a Jack Daniels incident a couple of week ago. Pie it is!

Ugh... I've had a few run-ins with Mr. Daniels. He and Mr. Cuervo don't get along too well in ::urp:: close quarters.

1 c Sugar
1 c Water
1 c Fresh mint leaves
4 c Blackberries
1 c Red Burgundy wine (sorry Chass)
Lemon juice (opt'l.)
Additional berries
-- for garnish

In a medium saucepan, combine the sugar, water and mint. Bring to
a boil, then simmer over medium heat, stirring occasionally, for
about 5 minutes to make a mint-flavored simple syrup.

Strain, discarding mint leaves, and cool. In a food processor,
coarsely puree the berries. Turn into a bowl and stir in the wine
and mint syrup. Taste and add lemon juice if you prefer a tarter

Pour the liquid into an ice cream maker and freeze according to
manufacturer's directions until firm. Garnish with additional berries.

Here's a couple blackberry one's for ya :)

Ozark Mountain Pie

1 c. sugar
Dash salt
1/4 c. cornstarch
1/2 tsp. cinnamon
1 c. blueberries
1 c. strawberries
1 c. blackberries
1 c. raspberries
1 c. water
2 tbsp. lemon juice
2 tbsp. butter or margarine
Pastry for double crust pie

In saucepan combine sugar, salt, cornstarch and cinnamon. Stir in berries. Add water and lemon juice. Cook until thickening and reaches boiling point . Pour into pie shell. Dot with butter. Top with top pastry, seal edges and cut slits in top. Sprinkle with sugar. Bake at 350 degrees about 35-45 minutes or until crust is golden brown.

Fruit Crunch Cake

1 c. flour
3/4 c. uncooked oats
3/4 to 1 c. brown sugar
1/2 c. (1 stick) melted butter
1 tsp. cinnamon
1/4 to 1/2 nuts
3/4 to 1 c. sugar
2 tbsp. cornstarch
1 c. water
1 tsp. vanilla
4 c. blackberries

Mix crumb mixture, put 1/2 on bottom of 7 x 11 baking dish or 9 inch square pan. Add 4 cups of fruit. Cook sugar, cornstarch, water and vanilla together until thick. Pour over fruit. Top with remaining crumb mixture. Bake at 350 degrees for 1 hour, less if needed.

here is a easy way to fix a cobbler

take whatever berries you want and pour into a 9 x 13 pan, then if you want you can put some sugar on them. Pour a cake mix over the top, then pour a melted stick of butter over the top. Cook at 350 for 30 minutes. grab some ice cream and enjoy

chass-- don't give up on the jack, it's the only stuff i can drink in excess and never feel bad in the morning! i've tried rick's recipe in the past,it's great!--tom

My kids love when it's berry pickin time. We head down to the river with our Easter baskets-Yeah we're rednecks! No more Jack for me for a long while. It's going to be a long hot sober summer now that I'm pregnant. I sure will miss an ice cold beer on hot summer day!
